Ingredients
• 1½ cups all-purpose flour
• ¾ cup unsweetened cocoa powder
• 1½ teaspoons baking powder
• ¾ cup granulated sugar (or brown sugar)
• ½ cup softened unsalted butter (or margarine)
• 2 large eggs
• ½ cup milk (dairy or non-dairy)
• 1 teaspoon lemon juice
• 1 teaspoon vanilla extract
• Pinch of salt (optional)
Instructions
- Preheat the air fryer to 320°F (160°C). Lightly grease an 8-inch round cake pan or line with parchment paper.
- In a bowl, sift together flour, cocoa powder, baking powder, and salt. Stir in sugar.
- Add butter, eggs, milk, lemon juice, and vanilla extract. Mix on low speed until combined, then briefly increase to medium-high for a smooth batter.
- Pour batter into the prepared pan, leveling the top. Cover tightly with aluminum foil, poking a few holes to let steam escape.
- Place the pan in the air fryer basket and bake (covered) for 45 minutes.
- Remove foil carefully. Bake for another 5–10 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 5 minutes. Invert onto a wire rack and let it cool completely before frosting or serving.
Notes
• Use foil during the first part of baking to avoid over-browning.
• Always check for doneness with a toothpick or skewer before removing the cake from the air fryer.
• For a vegan version, replace eggs with applesauce or flax eggs, and opt for non-dairy milk.
