Ingredients
4 boneless, skinless chicken breasts
2 tbsp olive oil
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup sun-dried tomatoes, chopped
2 cups fresh spinach
1/2 cup grated Parmesan cheese
1 tsp Italian seasoning
Salt and pepper to taste
Fresh basil or parsley for garnish
Instructions
Prepare the Chicken: Season chicken breasts with salt, pepper, and Italian seasoning.
Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Sear chicken for 5-6 minutes per side until golden brown. Remove and set aside.
Make the Sauce: In the same skillet, add minced garlic and sauté for 1 minute. Pour in heavy cream and chicken broth, stirring to combine.
Add Vegetables: Stir in sun-dried tomatoes and spinach. Cook until spinach wilts, about 2-3 minutes.
Combine: Return chicken to the skillet, spooning the sauce over it. Sprinkle Parmesan cheese on top.
Simmer: Reduce heat to low and let simmer for 5-7 minutes until the chicken is cooked through and the sauce thickens.
Garnish: Sprinkle with fresh basil or parsley before serving.
Notes
For a lighter version, substitute heavy cream with half-and-half or coconut milk.
Serve over pasta, rice, or with crusty bread to soak up the delicious sauce.
Store leftovers in an airtight container in the fridge for up to 3 days.
