Ingredients
16 large white or cremini mushrooms (stems removed)
• 8 oz cream cheese (softened)
• ½ cup shredded cheddar cheese (optional)
• 2 tbsp grated Parmesan cheese
• 2 cloves garlic (minced)
• ¼ tsp salt
• ¼ tsp black pepper
• 2 tbsp chopped green onions or parsley (for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper (or lightly grease it).
- Clean the mushrooms with a damp paper towel, then remove and finely chop the stems.
- In a medium bowl, mix together the softened cream cheese, (optional) cheddar cheese, Parmesan, minced garlic, salt, and black pepper. Stir until smooth.
- Spoon the cream cheese mixture into each mushroom cap, filling them generously.
- Arrange the filled mushrooms on the prepared baking sheet.
- Bake for 15–20 minutes, or until the mushrooms are tender and the filling is golden on top.
- Remove from the oven and garnish with green onions or parsley. Serve warm.
Notes
• For extra flavor, try adding cooked bacon bits or finely chopped spinach to the cream cheese mixture.
• If you prefer a spicier version, mix in diced jalapeños or a pinch of cayenne pepper.
• Adjust seasonings (such as salt and pepper) to taste.
