Ingredients

 16 large white or cremini mushrooms (stems removed)
• 8 oz cream cheese (softened)
• ½ cup shredded cheddar cheese (optional)
• 2 tbsp grated Parmesan cheese
• 2 cloves garlic (minced)
• ¼ tsp salt
• ¼ tsp black pepper
• 2 tbsp chopped green onions or parsley (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper (or lightly grease it).
  2. Clean the mushrooms with a damp paper towel, then remove and finely chop the stems.
  3. In a medium bowl, mix together the softened cream cheese, (optional) cheddar cheese, Parmesan, minced garlic, salt, and black pepper. Stir until smooth.
  4. Spoon the cream cheese mixture into each mushroom cap, filling them generously.
  5. Arrange the filled mushrooms on the prepared baking sheet.
  6. Bake for 15–20 minutes, or until the mushrooms are tender and the filling is golden on top.
  7. Remove from the oven and garnish with green onions or parsley. Serve warm.
