Ingredients
1 lb ground Wagyu beef (80/20 fat-to-lean ratio)
4 brioche burger buns
Salt and freshly ground black pepper
4 slices of cheese (optional; cheddar or Gruyère work well)
Toppings: lettuce, tomato, onion, pickles
Condiments: ketchup, mustard, mayo
Instructions
Prep the Patties: Divide the ground Wagyu into 4 equal portions (about 4 oz each). Gently shape into patties, making a slight indentation in the center to prevent puffing.
Season: Generously season both sides of the patties with salt and pepper.
Cook: Heat a cast-iron skillet or grill over medium-high heat. Cook the patties for 3-4 minutes per side for medium-rare, or until the internal temperature reaches 130°F (54°C). Add cheese during the last minute of cooking if desired.
Assemble: Toast the brioche buns lightly. Spread condiments on the buns, then layer the patty, lettuce, tomato, onion, and any other toppings. Serve immediately.
Notes
Don’t Overwork the Meat: Handle the ground Wagyu as little as possible to keep it tender.
Rest the Patties: Let the cooked patties rest for 2-3 minutes before assembling to lock in the juices.
Customize: Add caramelized onions, garlic butter, or a special sauce for extra flavor.
