Instructions

  1. Prep the Patties: Divide the ground Wagyu into 4 equal portions (about 4 oz each). Gently shape into patties, making a slight indentation in the center to prevent puffing.

  2. Season: Generously season both sides of the patties with salt and pepper.

  3. Cook: Heat a cast-iron skillet or grill over medium-high heat. Cook the patties for 3-4 minutes per side for medium-rare, or until the internal temperature reaches 130°F (54°C). Add cheese during the last minute of cooking if desired.

  4. Assemble: Toast the brioche buns lightly. Spread condiments on the buns, then layer the patty, lettuce, tomato, onion, and any other toppings. Serve immediately.

Notes

  • Don’t Overwork the Meat: Handle the ground Wagyu as little as possible to keep it tender.
